So for my second day of Christmas cookies I made these Chocolate Crinkle Cookies. They are adorable and very chocolatey! I think I should have baked them for a slightly shorter amount of time, since mine turned out a little bit dry in the center, but other than that they turned out great.
Chocolate Crinkle Cookies:
1/2 c butter (room temp)
1 c brown sugar
2 large eggs
1 1/4 c flour
3/4 c cocoa powder
1 1/2 tsp baking powder
1/4 tsp salt
1/2 c powdered sugar
Preheat oven to 350ºF. Line a baking sheet with parchment paper or a silicone baking mat.
Cream together the butter and brown sugar until light and fluffy. Mix in the eggs.
Add the flour, cocoa powder, baking powder, and salt. Mix just until soft dough forms.
Scoop by rounded tablespoons and roll each ball in the powdered sugar, evenly coating each one.
Bake until cookies are set and the tops cracked, about 13 minutes. Transfer to a wire rack to cool completely.
